Vinification and ageing: maceration for 8-10 days in large oak casks, with frequent replacement and turning.  Following a second fermentation called the maloactic, the wine is ready for ageing in large oak casks, three years for Barolo Vintage and minimun five years for Barolo Riserva. After bottling, the wine is allowed a further 6 months ageing in horizontal racks
